Pictured above is the Glass Gem Indian corn I grew this year - it get out in many different colors not just these . I ’ll save more on the dissimilar colors in another post .
Here is the Hopi grim corn that my booster Jody maturate . mark the kernals shrink .
When they dry out they looked very different from each other as show above . I conceive mayhap it was the way we dried them . Perhaps we dried them otherwise . The individual Hopi Blue kernals shrunk while the Glass Gem kernals keep their original shape . All this led me to wonder about the different type of maize I ’ve hear about – dent , flint , sweet , flour and popcorn and what makes them dissimilar . So here ’s what I found out .

Dent ( Zea mays indent ) – Dent corn is called ‘ field ’ corn and is used for stock provender or in processed food for thought . It is usually white or yellow and contains both hard and gentle starch . It becomes indented when mature . Field Zea mays contains 4 % sugar .
Flint ( Zea mays indurata ) – Flint corn is call ‘ Indian ’ corn and has a hard out cuticle and is hard deep down as well . The kernals are very severe , sort of like Flint River stone , hence the name flint . It comes in a wide scope of colour . Flint corn whisky is usually used for medal .
Zea mays everta ( Zea mays everts ) – Popcorn is atype of flint edible corn . It has a soft starchy center and a very hard exterior eggshell . When we heat it , the moisture inside the kernal blows up to become popcorn .

Sweet ( Zea saccharata or Zea rugosa ) – odoriferous corn is the bracing ‘ corn - the - cob ’ type of corn we eat on . It is also canned and frozen and contains more gelt than other types of edible corn . field of battle maize has 10 % sugars in it but will commute to starch quick if not run through soon after picking . That ’s why my grandmother use to transport us kids to blame the corn powerful before we put it in boiling water before dinner party !
Flour ( Zea mays amylase ) – Flour edible corn is used for bake . It is easygoing to crunch because of its soft nub . It is mostly blank , but can come in other colors like dismal Indian corn . It is one of the honest-to-goodness types of corn produce by Native Americans .
So when I calculate them up , I discovered the Hopi gentle maize is a flour corn and the Glass Gem clavus is a popcorn which is type of Flint corn . That explains why they look so unlike . The flour corn kernals are softer so they shrunk more while the stony corn whisky kernals are grueling and retained their configuration . Another ‘ ah ha ’ instant for me !
